In the Two-Day Process, score the dough ball on the second day, after removing it from the refrigerator. In the One-Day process, score the dough ball about an hour after you finish forming it.
Score the top surface of the dough ball:
- Attach a blade to the lame.

- Use the lame to make two shallow cuts in the top of the dough ball.
