Scoring the Dough Ball

In the Two-Day Process, score the dough ball on the second day, after removing it from the refrigerator. In the One-Day process, score the dough ball about an hour after you finish forming it.

Score the top surface of the dough ball:

  1. Attach a blade to the lame.

  2. Fold back corners of the cloth covering the dough ball in the proofing basket.

  3. Use the lame to make two shallow cuts in the top of the dough ball.

    Prepare to make first cut

    Pull lame through dough
    [dough]
    Start second cut
    [dough]
    Finish second cut

    Scored dough
