Making the Leaven

Just a test

When you have activated the starter and are ready to prepare the dough for a loaf of sourdough bread, make the leaven:

  1. Measure into a small mixing bowl:
    • 50 gm warm water (approximately 80° F)
    • 25 gm unbleached white bread flour
    • 25 gm whole-wheat flour
  2. Add:
    • 1 heaping Tbsp activated sourdough starter
  3. Mix with a spoon.

  4. Cover the leaven and leave it to rise in an 80° F oven.
