When you have activated the starter and are ready to prepare the dough for a loaf of sourdough bread, make the leaven:
- Measure into a small mixing bowl:
- 50 gm warm water (approximately 80° F)
- 25 gm unbleached white bread flour
- 25 gm whole-wheat flour
- Add:
- 1 heaping Tbsp activated sourdough starter
- Mix with a spoon.
- Cover the leaven and leave it to rise in an 80° F oven.
