Inverting the Dough Ball

While the oven is heating, invert the dough ball onto the auxiliary pot lid that will be used to flip the dough into the hot aluminum pot for baking:

1. Lay a second cloth across the top of the scored dough in the proofing basket.

   

2. Place the lid of the auxiliary pot on top of the proofing basket.

   

3. Lift the proofing basket topped by the cloth and lid.

   

4. Grab the handle of the lid and then invert the lid, cloth, and proofing basket so that the basket is on top.

   

   

5. Position the inverted lid over the auxiliary pot and then rest the inverted lid topped with cloth and basket on the auxiliary pot.
